OVERVIEW
Natsir’s wife, Diana, spends most of her time in the kitchen. Her dream was to open a restaurant. That never happened, yet from that tiny kitchen she manages to create wonders, feeding between twelve to twenty people on a regular basis. So restaurant it is, and certainly the best we’ve been to in Indonesia. Here are two of her simple and delicious recipes:
CORN FRITAS

Ingredients (≈ 20 corn fritas):
- 1 raw corn
- 4-5 shallots
- 2 garlic cloves
- 1/2 tomato
- 2 eggs
- A bit of flower
- coarse salt
- vegetable oil
Procedure:
- Slice the corn
- Smash the shallots, garlic cloves and salt
- Dice the tomato
- Beat the eggs
- Mix all the ingredients
- Add flower
- Slide several spoonfuls of the mixture in oil
- Deep fry for a few minutes then set aside on a strainer
- Serve warm as a snack or as a side
TEMPEH “AL SUGO”

Ingredients:
- 1 pack of tempeh
- 5 tomatoes
- 4-5 shallots
- 3-4 chili
- palm sugar (or brown sugar)
- salt
- vegetable oil
Procedure:
- Smash the shallots, chili and salt
- Dice the tomatoes
- Slice the tempeh in long strips
- Deep fry the tempeh, then put aside on a strainer
- Get rid of the oil
- Place the mixture of shallots, chili and salt in the pan
- Add the tomatoes
- Add the palm sugar (or brown sugar)
- When the sauce is ready, add the tempeh and stir
- Serve warm with corn fritas, rice and/or vegetables
